Chocolate & Coconut Parfait- Breakfast or Dessert?

So, for the first time since I started blogging about food, I was unsure of how to categorize a post. You see; my dilemma was centered around whether the above constitutes breakfast or dessert? I couldn’t decide. So I categorized it under both. Because, why not? In terms of aesthetics, this definitely looks like dessert. It could and should be served as dessert- I promise you no one will be disappointed. But then again, isn’t a granola parfait the perfect breakfast? I’ll let you decide…

This deliciously creamy, crunchy feast is a burst of chocolate and coconut. It’s so decadent, yet so incredibly simple to prepare: under the 5 minute breakfast prep threshold I usually allot myself on any given weekday! To explain what’s in it, I’ll break it down layer by layer. And yes, I had swore off granola for a while. But then I found this particular brand “Love Crunch Organics”. And no, this is not a sponsored post. What I like about it is that it’s sweetened with cane sugar juice. My type of deal. The inherent problem with granola is and has always been it’s high sugar content. They do a good job at keeping sugar relatively low and sourcing it from natural plant-based sources like sugar cane. The granola flavor I picked also comes with desiccated coconut and dark chocolate. I’ll have both, please!

You will Need:

Bottom Layer-Coconut Yogurt

  • 1/2 cup of Vanilla Coconut Yogurt or you could also go with unsweetened Coconut Yogurt ( I use YOSO)

Middle Layer- Chocolate Pudding

  • 2-3 pitted Medjool dates (depending on how sweet you want it)
  • 1 ripe frozen banana sliced
  • 2 tablespoons of raw cacao
  • 3/4 cup of unsweetened coconut or almond milk * Carrageenan free
  • 1/2 teaspoon of pure vanilla extract

Top Layer-Granola Topping

Completely your choice! I did it again yesterday using the Love Crunch Dark Chocolate & Red Berries flavor and it was just as good. The added bonus, it had flax seeds! Or you could use my maple pecan granola recipe (already on the blog)!

Whatever you do, enjoy it! This chocolate pudding recipe is easy, versatile and goes well with fruits! I like to make a big batch and it keeps well in my fridge for up to 2 days.

*Carrageenan has been linked to cancer by some preliminary studies. I always ensure my non-dairy milk choice is carrageenan free.
