Lemon Poppyseed Muffins!

When it comes to soft, pillowy, airy, lemony baked goods these are a real treat! Call them muffins or cupcakes, they’re a bit of a hybrid of both. They remind me of a light pound cake texture and butter or ghee along with thick Greek or coconut yogurt give these little citrusy bites a heavenly texture! I love mine with a cup of hot coffee on a slow weekend morning; but they come equipped with a two-ingredient glaze that can quickly transform them into a more indulgent dessert! These are made with real + simple ingredients and come with plenty of substitution options. Try them and share them with friends and family, you will love!

Easy Cajun Shrimp Pasta

You’ve been warned: this unassuming little recipe is dynamite. Let’s face it-Cajun Shrimp has been a favorite of mine ever since I can remember. My childhood BFF is from New Orleans and cajun and creole cuisine has always had a soft spot in my heart. I virtually had lunch with this guy and our group of friends every single day throughout high school; and I always got to try the awesome food they packed him. We would often trade lunch items back and forth; picking and choosing what we would both eat from whatever our moms packed for us that day.

Ever feel like brunching like a boss, but with minimal prep time involved- (AKA: I don’t want to spend ALL morning in the kitchen)? Someone, somewhere felt just like you and came up with a frittata bake! It feeds a crowd or a few; the process is the same. You can double up or double down on this recipe and still win. Loved by all those who try it and enhanced by whatever seasonal vegetables you have flying around; this will become a breakfast table staple. Or, a quick and practical lunch or dinner. Or spoiler alert, the single-best way to clean-out-your-fridge before your next grocery shop.

Deliciously Healthy Apple Crisp

I have a well-known penchant for ALL desserts that involve baked apples. Simply said, there’s a very special place in my baker’s heart for apple pie, apple crisp, apple tarts, apple muffins… you name it! the list goes on… and on! There’s nothing better than the dispersing smell of warm, cinnamon-dusted apples, with a little nutmeg sprinkle. I wish I could bottle up that scent and share it with you all. They should totally make apple pie scented candles, I am 100% behind that.
