Peas, Spinach & Kale Pasta Salad with Italian Vinaigrette

Cue in warmer (Spring-is) mostly Summer weather and I’m all about these cold and creamy pasta salads that have a long fridge life, are ready in a whim, and save your life for quick, weeknight dinners. Or even better; make you look like a pantry superstar at the next family dinner or potluck with friends. Everyone will love it and ask you for the recipe. They make the best side dish or are easily customizable into a main dish by simply adding your favorite protein.

Creamy, Healthy Penne A La Vodka

Here’s my ode to a la Vodka pasta sauce, with my very own rich sauce that’s entirely dairy-free. FYI-traditional a la Vodka sauce is essentially: tomato puree or marinara, heavy cream, butter, parmesan, and vodka all combined to create the dreamiest, tastiest sauce. I use tomato puree or a good quality marinara to mix into mine. In fact, the blog now has its own homemade marinara sauce recipe, in case you want to try the ultimate treat!

Hearty Kale and Marinara Pasta

In your day-to-day life, pasta can be a pretty practical vehicle to pack some extra vegetables into your daily diet. It also presents an opportunity to meal prep or batch cook, because it reheats easily and can also be flash frozen to warm up later during the week, when in a pinch and looking for a hearty, quick dinner. But what I’m focusing on today, is dressing up pasta for special occasions, like a holiday meal!

Mushroom and Cashew Alfredo Pasta (DF and GF)

Mushroom and light cream truffle pasta has ma’ heart. This one is completely dairy-free and get’s that cheesy light truffle cream sauce taste from none other than… C-A-S-H-E-W-S. Yep, you read that right; (insert bold letters and conspicuous spacing :P). The same good ol’ raw cashews I make vegan cheesecake from. The same handful of raw cashews that make my smoothies denser and creamier. The same cashews that I use for my cashew cream cheese spread. Starting to make sense? Cashews are the best source of cheesy goodness, aside from cheese itself. You will love!
