Chocolate Mocha Overnight Oats!

These overnight oats are my new FAVE for one simple reason: what’s better than chocolate (in the form of cacao powder) and mocha thanks to 1/2 shot of warm espresso?! Plus I’ll be needing that tiny bit of caffeine! It’s probably one of the best combos, ever. Top them with all-natural peanut butter, a handful of raw walnuts, fresh banana slices and you’re set!

Peanut Butter Cookie Dough Energy Bites!

I wanted to try some bliss balls with benefits; and these cookie dough energy bites are just that. They have the goodness of old-fashioned rolled oats, ground flax seed meal, dairy-free dark chocolate chips, creamy (all-natural) peanut butter and a tiny dash of raw agave and coconut or MCT oil for some healthy fat action. Oh and they DO taste like raw peanut butter cookie dough. Win-win? 😉

When it comes to muffins, you get what you put in. These are healthy, wholesome- but don’t taste it one bit. That’s exactly the kind of baked good situation you want to be in. They’re made with ALL good things like; certified gluten-free oats, organic pumpkin puree, dairy free chocolate chips, pasture-raised eggs etc. But hey, the finished product tastes both; decadent and highly enjoyable. Easy Chickpea Flour Banana Bread

OK: as weird as this combo may sound; don’t let that deter you from trying this. You are literally 7 ingredients away from some of the best banana bread of your life. Take it from this banana bread monster (AKA: connoisseur) 😉 I have tried baking brownies with canned chickpeas; but this one is completely different. Like, totally different texture altogether. Say H-E-L-L-O to chickpea (or fava) flour! It’s super affordable and naturally gluten-free. It looks like a light, yellow-ish flour; somewhat similar to cornmeal. It’s not dense nor will your baked goods feel heavy, either.

Blueberry Buttermilk Kefir Pancakes

Thick and FLUFFY pancakes have forever had my heart. I’ve said it time and time again. The blog now hosts a rapidly growing collection of healthy pancake recipes, and the latest comes with some serious gut benefits from a handy little addition: K-E-F-I-R (correctly pronounced kuh-fear, not kee-fur).  You get all the taste and coziness of brunch food with ALL real food ingredients: AKA no gimmicks or fillers from boxed pancakes. I love to have these for breakfast or dinner. I can eat pancakes for dinner because I am an adult. Am I right?

Banana Bread Overnight Oats

Dear Banana Bread,

I want you to meet Overnight Oats. Also, you’re my new favorite breakfast!

Picture this: mashed banana, walnuts, and old-fashioned rolled oats covered in the best vanilla almond milk, thick coconut yogurt and left to soften and expand overnight. Right before serving- top with more walnuts, fresh banana slices, a dollop of coconut yogurt, a dash of pure maple or coconut nectar AND dark chocolate chips. Can you handle it?

Sumac and Harissa Scrambled Eggs

Lately, I find myself circling back (again) to scrambled eggs. And it’s not because I fell out with sunny side up again; nah. We’re tight. I just love that I can make my scramble feel a little EXTRA special with this harissa, sumac and extra virgin olive oil combo that’s going to have you making this on repeat. It’s THAT good.
