Flourless Chocolate Pumpkin Muffins

When it comes to muffins, you get what you put in. These are healthy, wholesome- but don’t taste it one bit. That’s exactly the kind of baked good situation you want to be in. They’re made with ALL good things like; certified gluten-free oats, organic pumpkin puree, dairy free chocolate chips, pasture-raised eggs etc. But hey, the finished product tastes both; decadent and highly enjoyable. You want a second muffin the moment you take a bite of the first. These are so easy to make and the best kinda Fall treat!

Fudgy Almond Flour Brownies

Two words: FUDGE FACTOR! The classic gets a remake! Let’s agree by stating the obvious: am totally brownie-obsessed; and have been so for as long as I can remember. These easy-to-make double chocolate almond flour brownies are my “spirit animal”, my kryptonite, the cheese to my macaroni. They’re my favorite chocolatey treat and the BEST dessert, in my humble opinion. And friends; this comes from a girl who likes to bake a’ plenty.

Easy Chickpea Flour Banana Bread

OK: as weird as this combo may sound; don’t let that deter you from trying this. You are literally 7 ingredients away from some of the best banana bread of your life. Take it from this banana bread monster (AKA: connoisseur) 😉 I have tried baking brownies with canned chickpeas; but this one is completely different. Like, totally different texture altogether. Say H-E-L-L-O to chickpea (or fava) flour! It’s super affordable and naturally gluten-free. It looks like a light, yellow-ish flour; somewhat similar to cornmeal. It’s not dense nor will your baked goods feel heavy, either.

Crispy Buffalo Cauliflower Bites

Say helloooo to cauliflower wings! They’re pretty darn satisfying and made with all good things. Coated in your choice of extra virgin olive oil or avocado oil and roasted + broiled to crisp-up ever so perfectly in your oven. I like to coat them in olive oil and season them with all the dry spices; right before they go in for a first round of baking. Once they’ve softened a bit, I like to toss them into my favorite red hot sauce before throwing them back into the oven for the final touches and that much-needed CRISP FACTOR! 😉

Blueberry Buttermilk Kefir Pancakes

Thick and FLUFFY pancakes have forever had my heart. I’ve said it time and time again. The blog now hosts a rapidly growing collection of healthy pancake recipes, and the latest comes with some serious gut benefits from a handy little addition: K-E-F-I-R (correctly pronounced kuh-fear, not kee-fur).  You get all the taste and coziness of brunch food with ALL real food ingredients: AKA no gimmicks or fillers from boxed pancakes. I love to have these for breakfast or dinner. I can eat pancakes for dinner because I am an adult. Am I right?

Creamy Bow Tie Pasta Salad

Creamy, dreamy cold pasta salad that will change your outlook on pasta possibilities. As opposed to using mayo or Greek yogurt (an often-used healthier mayo substitute) I decided to go back to my roots (quite literally) and use HUMMUS. Yep, you read that correctly. Creamy, chickpea-powered protein goodness in lieu of eggs and canola oil. I can’t tell you how good it tastes, but it tastes even better with a few drops of Tabasco or your favorite picante sauce.

Warning: This is not your average potato salad. Once you give this incredibly simple recipe a try, you won’t ever return to the store-bought variety. That, my friends, is a promise. If you enjoy boiled potato salad, wait till you try this roasted potato salad! This simple move from [boil to roast] makes for some serious, next-level goodness. This comes from a self-professed potato lover. “Potatoes all day, cooked any way!” (must have been my motto- at some point in my life. Half the time they ended up being fries, anyways. 😛

Healthy Caprese Pasta Salad

Alright. Summer is officially here! And that can only mean barbecues, gatherings, potlucks- AKA: all sorts of events involving family, friends and good FOOD. If you’re anything like me, I am always asking- “What could I bring?” and then trying to think of something most people can enjoy and would be easy, hearty and healthy. You know what else I consider? Recipes that can be easily doubled to feed a crowd and go well with whatever food your host has prepared. Check and check! This recipe honestly goes well with pretty much, anything! I’ve yet to meet someone who’s tried it and turned away from it. It’s got the right mix of flavors and spices. It’s not spicy, it’s just flavorful and you can’t stop eating it.
