Chocolate Mocha Overnight Oats!

These overnight oats are my new FAVE for one simple reason: what’s better than chocolate (in the form of cacao powder) and mocha thanks to 1/2 shot of warm espresso?! Plus I’ll be needing that tiny bit of caffeine! It’s probably one of the best combos, ever. Top them with all-natural peanut butter, a handful of raw walnuts, fresh banana slices and you’re set!

Peanut Butter Cookie Dough Energy Bites!

I wanted to try some bliss balls with benefits; and these cookie dough energy bites are just that. They have the goodness of old-fashioned rolled oats, ground flax seed meal, dairy-free dark chocolate chips, creamy (all-natural) peanut butter and a tiny dash of raw agave and coconut or MCT oil for some healthy fat action. Oh and they DO taste like raw peanut butter cookie dough. Win-win? 😉

One-Pan Prunes and Shallot Chicken

WHO doesn’t enjoy an easy, hearty and delicious weeknight dinner that offers all the coziness of homestyle cooking- while playing off the hassle-free aspect of one-pan meals? With March being Nutrition Month, I wanted to share a dish that not only delivers on fiber and vitamins, but that requires minimal effort, AKA: this meal literally cooks itself. Bonus: it tastes like your mother’s cooking. It does for me, at least!

Tabbouleh Panzanella Salad

If you are a fan of classic Mediterranean Tabbouleh, you’re doing to L-O-V-E this Panzanella version! Have you even heard about a Panzanella salad? It originated in Tuscany, Italy (of all pretty places) and it consists of bread, tomatoes, cucumber and other seasonal vegetables. I am convinced the salad originated as a way to effectively use leftover, stale bread instead of throwing it away.  You use good quality extra virgin olive oil and vinegar (or lemon) and I personally like it when the bread is soaked in the vinaigrette; much like croutons would in traditional salad.

Creamy, Healthy Penne A La Vodka

Here’s my ode to a la Vodka pasta sauce, with my very own rich sauce that’s entirely dairy-free. FYI-traditional a la Vodka sauce is essentially: tomato puree or marinara, heavy cream, butter, parmesan, and vodka all combined to create the dreamiest, tastiest sauce. I use tomato puree or a good quality marinara to mix into mine. In fact, the blog now has its own homemade marinara sauce recipe, in case you want to try the ultimate treat!
