Lemon Poppyseed Muffins!

When it comes to soft, pillowy, airy, lemony baked goods these are a real treat! Call them muffins or cupcakes, they’re a bit of a hybrid of both. They remind me of a light pound cake texture and butter or ghee along with thick Greek or coconut yogurt give these little citrusy bites a heavenly texture! I love mine with a cup of hot coffee on a slow weekend morning; but they come equipped with a two-ingredient glaze that can quickly transform them into a more indulgent dessert! These are made with real + simple ingredients and come with plenty of substitution options. Try them and share them with friends and family, you will love!

The perfect way to warm up and serve a cozy and delicious creamy pasta sauce. Roasted butternut squash gets a glow up and serves as the star-ingredient in this luscious and nourishing “cheese-like” sauce. The recipe is vegan and gluten-free; but for those that consume dairy I added some aged cheese options like parmesan, pecorino and Manchego; all of which are easier to digest and accentuate this delicious sauce perfectly! Best Lentil Soup Recipe

Let’s talk about this lentil soup, shall we? Five words: NOT your average lentil soup.

It feeds a crowd, costs close to nothing, is pretty effortless to whip up AND doesn’t taste like your standard vegetarian or vegan fare. I always jokingly said that if I was to become a full-on vegetarian; I would absolutely cook a lot of Mediterranean and Indian-inspired dishes. Why? because they’re rich, vegetable-loaded, and you don’t feel deprived at all. This little recipe checks ALL those boxes and then some. I am beyond confident it will quickly become a part of your weekly dinner rotation!
