Creamy Peach Crisp Overnight Oats

Summer is for peaches. You can’t possibly make it through summer and ignore the beauty of peach season. I didn’t quite understand the difference between in-season, tree-ripened peaches and peaches shipped from afar in the dead of winter- but now I fully do.

If you’ve followed the blog for a while- you may be very well aware of my penchant to recreate classic desserts (strawberry shortcake, mocha fudge brownies, carrot cake and banana bread) within the context of overnight oats. Yes, soaked oats sort of taste like cake batter with the right mix of ingredients and dose of creaminess.

Peach and berry crisp is something I can’t get enough of; especially when both are in season.

What I love about a peach crisp is:

  1. the sheer convenience and quick assembly
  2. the comfort-food quality; tastes homemade and cozy every time!

One of the easiest desserts to ever assemble; usually consisting of a rich fruit base with maple, lemon zest and some cornstarch for thickening with an oat crumble topping. In my case; I mix the oats with almond flour and golden-like coconut sugar for a thick and caramel-like crunchy topping made with good-for-you ingredients.

But wait- it gets better. Insert a caramelized peach topping into the equation. Golden notes of maple and the natural sweetness of peaches shine through. The peaches are warmed up in a pan with your choice of coconut oil or vanilla ghee for the best topping one could conjure.

In the case of overnight oats; we’re still working with huge chunks of fruit, maple to sweeten, lemon zest to brighten (completely optional) and oats themselves to give it substance. However; we insert creamy coconut based yogurt OR Greek-style yogurt (if not dairy-free) and along with your favorite nut milk we create a half and half sort of mixture that will transform dry oats into soaked, pillowy dessert-like goodness.

Flavors like nutmeg, lucuma powder and cinnamon can help bring in the caramel-factor. I love to add cinnamon to my overnight oats because it’s one of the best foods to eat in the morning; as it helps to stabilize our blood sugar levels and fend off snacking attacks throughout the day. I am slow and steady snacker and little meals like these keep me full, happy and satisfied during many busy mornings.

Creamy Peach Crisp Overnight Oats

  • Servings: 1-2

Ingredients (serves 2)

  • 1 cup of old-fashioned rolled oats (large flake oats)
  • 1/2 cup of Skyr, Greek or coconut yogurt
  • 1/2 cup +1 Tbsp cup milk of choice
  • 1 tablespoon of chia seeds
  • 1 tablespoon of smooth almond or cashew butter
  • 1 tablespoon of sweetener of choice; I love maple syrup or honey
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of lucuma powder (optional: a superfood with a deep, rich caramel-like taste)
  • 1/3 cup of crumbled walnuts or pecans
  • 1.5 cups of cubed peaches (peeled and cored)

Caramelized Peach Topping 

  • 1-2 peaches sliced vertically (peeled and cored)
  • 1 tablespoon of coconut oil or vanilla ghee
  • 1 tablespoon of pure maple syrup
  • 1/4 teaspoon of cinnamon
  • 1/2 tablespoon of fresh lemon juice
  • 1 teaspoon of rum or bourbon (if feeling ambitious!) totally optional 
  • 1/4 teaspoon of nutmeg
  • Pinch of sea salt; a little less than 1/4 teaspoon

Instructions

  1. In a jar or glass tup with a lid, add all of your base ingredients and mix with a spoon or give them a good shake once covered. Let everything soak overnight in your fridge. 
  2. For the caramelized peaches topping, in a bowl mix: sliced peaches, pure maple, lemon juice, cinnamon, nutmeg and sea salt. Toss well to coat evenly. Warm up a skillet to medium heat and melt your coconut oil or vanilla ghee and then add your peaches. Stir occasionally and they’ll caramelize in ~7 minutes. If you’re adding a tiny pinch of bourbon or dark rum- do it at the very end and let it evaporate off the skillet ~1 min.
  3. ENJOY every bite. These are glorious. You can sub apples or bananas in lieu of peaches- and they also caramelize beautifully with these flavors.
