I am always looking for ways to make oatmeal more exciting. Morning oats have a bad rep, but am hellbent on showing you they don’t have to be dull. They’re probably one of the most filling breakfasts around; and with the help of a few, nutrient-dense ingredients; we can have delicious dessert for breakfast. For real.
I am back from a little March Break holiday that left me feeling depleted. Running after two littles while away from home can be that more challenging. After returning to Toronto reallyyyy late at night, this was my breakfast on the first day back: scrumptious. Totally nourishing & satisfying. I was literally sad when I finished it. I scraped the bowl with my spoon, and had to stop myself from licking it. No shame.
Say hello to DOUBLE chocolate overnight oats with almond butter, maca powder & dairy-free chocolate chips. For an extra crunch factor I threw in raw cacao nibs. And because chocolate and banana go so well together, I sliced some bananas and topped them with shredded coconut. Deeeeelish! That’s totally a word, by the way. (And I pride myself with good grammar.)
Every spoonful of this bowl was so incredibly indulgent. Yet there was no dairy. Or white, refined sugar. Or gluten. These oats are fully vegan because they’re soaked overnight in dairy-free coconut yogurt. I found (after several tests) that soaking dry oats in yogurt, makes for creamier and richer overnight oats than those soaked in any nut milk of your choice. And if you do use nut milk, I really recommend almond milk or creamy cashew milk for an extra oomph.
And, if you’re not intolerant to dairy products, you could make this bowl with Greek or Icelandic Skyr-style yogurt. Same results, just different alternatives for those that can’t find coconut yogurt and have no need for dairy-free options.
On the ingredient list below, I also list maca powder. Maca is a superfood, one that has generated a lot of buzz lately. I started adding it to my chocolate smoothie bowls way back when the blog started a year and a half ago. I love the energy boost, the hormone balancing benefits & the fact that it helps stabilize blood sugar levels. I always encourage my readers to do their own independent research & I list it as a completely optional ingredient, but this is something I’ve used for a while & believe in.
Chocolate is also something I (really) believe in- quite strongly, in fact. I hope you enjoy these as much as I do! Cause they’re honestly the best oats in the world!
Double Chocolate & Maca Overnight Oats
- 1/2 cup of old-fashioned rolled oats (GF varieties, available)
- 1 cup of dairy free vanilla coconut yogurt
- 1 tbsp of raw cacao powder
- 1 tbsp almond butter or peanut butter
- 1 tbsp of maca powder (optional)
- handful of raw cacao nibs
- handful of chocolate chips, I buy DF varieties
- 1/2 a banana sliced
- handful of shredded coconut
- raw walnuts
- 1 ground vanilla bean or 1 tsp pure vanilla extract
- Pour in 1 cup of coconut yogurt into a measuring cup. Add the cacao powder to the yogurt and mix well to fully integrate. It will become chocolate yogurt. Feel free to add a dash of maple syrup if you’re using plain coconut yogurt.
- Add the oats to a container with a glass lid, cover with the chocolate yogurt mixture and give it a good stir to ensure no oats are left behind uncoated.
- Mix in 1 tbsp each of almond butter & maca powder.
- Leave it in the fridge overnight, lid on. You could even give it a good shake.
- Before serving, top with DF chocolate chips, raw cacao nibs, sliced bananas & shredded coconut. Enjoy!!
