There could very well be 2 cups of kale in your breakfast bowl and you wouldn’t even know it!

Who doesn’t enjoy a nice, cold, nutrient-dense smoothie bowl with ALL the fruit & toppings under the sun? I was so thrilled to get some emails from you guys last week asking me about new smoothie bowl recipes. It seems to me some of you may miss my colorful smoothie bowls. Although I often share smoothie recipes on Instagram along with the post; I should perhaps always upload these recipes in the blog repository as well, because it’s easy and more accessible to everyone for later use. A few weeks ago, I used the last of the figs that were in my fridge and I placed them over this beautiful smoothie bowl made with sweet mango, pineapple, banana & spinach. Something you must know about my smoothie bowls: I often prepare the base the night before and leave it inside the fridge overnight which serves a dual purpose; it saves time in the morning and it allows the base to settle and thicken and not be soupy, at all. The other thing you should know is smoothie bowls are one of my preferred “clean out the fridge” methods. I literally clean house before welcoming a new set of groceries. Every little bit of fruit, mostly odds and ends that have been left astray are what’s in.

One of the things I’ve learned after years of meticulous food prep is to be cognizant & try and not be wasteful of food. To that purpose, I use every single bit of produce and fruits available to me at the time. Especially if the fruit is starting to get soggy or feeling overly ripe. Bonus: your smoothie will be that much sweeter! This is particular true with bananas & mango. Both of which go in here! Use them before you lose them.

So let me share this green glow smoothie bowl that will rock your palate and make you rethink breakfast. And dessert. Because it’s breakfast that tastes like dessert. That’s the goal, right?

Green Glow Smoothie Bowl

Ingredients

  • 2 cups of organic kale or spinach
  • 1 ripe frozen banana sliced
  • 1 fresh mango (peeled and sliced, no seed)
  • 1 cup of frozen pineapple
  • 1 tbsp of hemp hearts for protein
  • 3/4 cup of coconut water or nut milk of your choice

For the toppings:

  • Fresh black mission figs
  • Banana
  • Coconut chips
  • Dry Buckwheat groats
  • Chia Seeds
  • Bee Pollen

Bee Pollen is one of the most complete superfoods available in nature and is packed with a ton of nutrients and is 40% protein. I eat at least 1 spoonful every day. It tastes a bit like dry honey, and may have a bit of a bitter aftertaste. The better the quality, the sweeter the bee pollen.

Instructions

Blend all the ingredients together until smooth. Depending on your blender, this may take 25-35 secs or more. Transfer to a bowl and enjoy with toppings of choice. If you want a thicker smoothie bowl, try only 1/2 cup of liquid and 3-4 ice cubes. Enjoy!! This is so refreshing and such a nutritional powerhouse.
