Pretty in Pink: A Strawberry Shortcake Smoothie

This is the stuff healthy food dreams are made of. Smoothies that taste like dessert and can effectively curb a sweet tooth craving, while nourishing your body. If I had to pick a favorite dessert; that would be strawberry shortcake. I would not hesitate to answer or think twice about it. In fact, every single birthday cake I had back home during the 18 years I lived there was a strawberry shortcake. And when I went home to celebrate turning 25 (after spending 6 birthdays abroad), there it was- that big strawberry shortcake double decker, overflowing with strawberries & layered with the best homemade Chantilly cream. My mother knows me well. That will perhaps be my next baking project: to come up with the moistest, fluffiest gluten-free white cake to host a mountain of strawberries and drip with vegan cashew cream.

In the interim, I like to sip on this deliciously creamy, smoothie and reminisce. The sweet ripe strawberries, the creaminess of oats & coconut milk, the sweetness of pure vanilla extract; it all comes together so perfectly. And those peonies in the picture- well, I wish they were edible, too. Something that looks so pretty must taste great! Don’t you think? Peonies are nature’s cotton candy. I am obsessed with those, too…. But that’s a story for another day. This smoothie is so incredibly delicious and good for you. It’s packed with fruit, soluble fiber, good fats & protein: your body will thank you and your palate will throw in a happy dance, as well.

Strawberry Shortcake Smoothie

Ingredients

  • 1 cup of really ripe strawberries (you could use frozen ones for a frappuccino-like texture)
  • 1/3 cup of raw, old-fashioned wheat-free (GF) rolled oats
  • 1 tsp of pure vanilla extract or vanilla powder
  • 1/2 cup of coconut OR almond milk *carrageenan free
  • 1/2 cup of vanilla coconut yogurt or greek vanilla yogurt
  • 1/4 tsp of ground cinnamon
  • 1 tbsp of almond butter or flaxseed oil for good fats (I use flaxseed oil & it makes it really dense & creamy, like a strawberry milkshake!)

Instructions

Blend on “high” until desired consistency is obtained. You may notice oats take a little longer to blend into the smoothie, but this also depends on your blender. I usually always blend for 30 seconds or less. Enjoy it!!

*Carrageenan has been linked to cancer by some preliminary studies. I always ensure my non-dairy milk choice is carrageenan free as a precautionary measure.

Smoothie de Pastel de Fresas

Ingredientes

  • 1 taza de fresas frescas bien maduras. Lavadas y sin tallo de hojas verde. Se pueden usar fresas congeladas para un smoothie tipo malteada o milkshake
  • 1/3 taza de avena seca libre de gluten (se pulveriza en la licuadora después)
  • 1/2 taza de yogurt de coco sabor a vainilla (libre de lácteos) O yogurt griego sabor a vainilla si consumen lácteos
  • 1/2 taza de leche de almendra o leche de coco * siempre compro libre de carrageenan
  • 1/4 cucharadita de canela
  • 1 cucharadita de extracto puro de vainilla
  • 1 cucharada de mantequilla de almendras o aceite de linaza para consumir grasas saludables

Instrucciones

Licuar todos los ingredientes juntos hasta obtener la consistencia deseada. Cuando se le agrega avena a un smoothie puede tomar unos segundos de mas. Por lo general, siempre me toma unos 30 segundos en “High” para que todo se mezcle bien. Si lo quieren mas espeso, agregar unos cuantos cubos de hielo y usar fruta congelada. Este smoothie lleva fruta, fibra gracias a la avena, grasas saludables y proteína. También cabe mencionar que la leche de almendras es bastante alta en calcio. Que lo disfruten!

  1. Made it, loved it!🍓 I couldn’t resist and made this beauty in the afternoon. It tasted heavenly great! Cold and warming at the same time – I think because of the cinnamon 👌My husband is a huge fan of strawberry milkshakes and he loved it, too.😊
