Nothing says summer like tree-ripened peaches scattered across local farmer markets in Toronto. They are not quite fully in season yet, nor has summer fully arrived. But I just couldn’t resist buying the first basket of peaches I came across. Peaches, nectarines and plums (all from the same family) are some of my favorite fruits.
Some people are a bit surprised to see me incorporate them into smoothies, but they make an amazing drink; either by themselves or paired with other fruits. Mango and peaches pair deliciously well together, and the burst of flavor is delectable. Oh and I decided to add bananas, because well, I add bananas to everything. Almost everything. The result was one of the best yellow smoothies I have tried with a really pleasant tropical flavor. This smoothie is very well-balanced, as it’s packed with healthy fats: banana, coconut manna, & flaxseed oil. It has a ton of fiber in the fruit, peaches and mango. Oh and the peel! I never discard fruit peel, as it’s packed with nutrients and fiber. In fact, I eat the peel as am prepping the smoothie. And it’s got protein in the non-dairy beverage, plus you could always add chia seeds for an added boost. See below.
Serves 1, you will need:
- 3 very ripe peaches peeled and sliced
- 1 cup of ripe mango chunks
- 1 frozen banana, sliced
- 1 tablespoon of flaxseed oil
- 1 tablespoon of coconut manna or coconut butter
- 1 cup of coconut, cashew or almond milk *carrageenan free
Optional:
- 1 tablespoon of Chia seeds and/or bee pollen
- 1 tablespoon of raw Manuka honey or agave for added sweetness
Blend on “high” until desired consistency is achieved. Enjoy!!
*Carrageenan has been linked to cancer by some preliminary studies. I always ensure my non-dairy milk choice is carrageenan free.
