Rainbow Smoothie Bowl

I captioned it: “I ate a rainbow for breakfast”- and by the looks of it, I certainly wasn’t kidding. It looks beautiful and somewhat time-consuming, but the sole intent of this post is to show you how incredibly easy this was to prepare.

When making a smoothie bowl, I like to make the smoothie (which I’ll refer to as the base) the night prior. There’s two simple reasons for this: one it’s easy to just throw on toppings in the morning when you’re in a rush and got others to feed, too. And second, spending the night in the fridge allows the base to thicken and settle. This is exactly what you want! You don’t want a watery or thin consistency.

For this base I chose a tropical-inspired combo that’s always a no-fail and is very versatile. It pairs well with a variety of different fruit and seed toppings. The main ingredients are banana, kiwi, spinach and pineapple. The taste is indulgent without it being overly sweet.

Ingredients

For the Base

  • 1 cup of tightly packed baby spinach
  • 2 frozen bananas sliced
  • 1 cup of pineapple cut into chunks
  • 3 kiwis peeled and sliced
  • 1 tablespoon of chia for protein
  • 2 tablespoons of coconut yogurt
  • 2/3 cup of water OR almond milk (your choice)

For the Toppings

  • 1 tablespoon of dry goji berries
  • 1 tablespoon of pepita seeds
  • 1 tablespoon of dried coconut slices
  • 1 tablespoon of hemp hearts (for sprinkling, the finishing touch)
  • 1/2 a banana sliced
  • 1 handful of blueberries
  • 1-2 figs, thinly sliced

I can’t even begin to describe how decadent and refreshing of a breakfast this is. It’s so incredibly nourishing and filling, without any heaviness or bloating. It’s food that tastes great, and makes you feel great about eating it. Feel free to play with the toppings. Other toppings I highly recommend on smoothie bowls are bee pollen, cocoa nibs, and flax seeds. Try looking into those, you may be inclined to try them at some point in time.

For some odd reason, eating healthy has been portrayed as a scary and daunting task. I would stare at smoothie bowls online myself and wonder where or how people would find the time to come up with elaborate art for food. Unbeknownst to me, it was easy and there’s nothing scarier than eating empty nutrients. I was good at that. I would eat white bleached toast bread and sugary jam and coffee every morning and wonder why I wouldn’t feel great or look good- if I only ate small portions. It’s not about how much you eat I learned, it’s all about what you put into your body. Happy Eating and try something new every day! Your body will thank you.
